The Orange Blossom Muffin is classic muffin that is simple to prepare and full of citrus flavor and crunchy pecan pieces. It's a great muffin if you are not a big fan of over sweet muffins but still has enough sweetness to enjoy. The muffins take about 10 -15 minutes to prepare and about an additional 15 minutes to bake and come out moist and fluffy. In a air tight container, they will last for a few days.
As the holidays are coming to an end its is time to get back into work mode. One of my go to morning breakfast if the classic muffin. It is just so simple to make and easy to grab as you are walking out the door on a busy morning. These raspberry coffee cake muffins are insanely easy to make and soon enough your home will be filled the smell of fresh baked goodness. These raspberry coffee cake muffins don't just have one layer of great streusel topping, but has an additional layer in the middle that give an extra crunch (plus who doesn't like more streusel topping) and great flavor of the fresh raspberries.
Cornbread is one of the best accompaniments to a meal. The flavor of from the corn meal makes it a totally different experience the the standard bread. This honey cheddar cornbread its my all time favorite with the sweetness of the honey and the addition of the cheddar creaminess boosts the flavor. The cast iron pan adds a great crust. This recipe can be made in muffin tins, check the recipe below.
As from Minnesota, we are a big art of the discovering different kinds of apples especially for northern climates. The most popular is the Honeycrisp, but almost every one is great flavored apple. The best Minnesota apples to bake with are haralson and zestar. This apple upside-down bread is a fantastic apple dish. It can make a great breakfast but also can make a great dessert warm with a side of cold vanilla ice cream. The apples come out caramelized and the sugary glaze hardens slightly when it cools and covers all the sides as you flip it over onto a dish. Check out the recipe below in post.
Muffins are one of the most easy breakfast foods for the person on the go. They are quick and easy to prepare in a short time and will last for days. These Blueberry-Almond muffins are a great change for the standard classic blueberry muffin. They are covered in a struesel that is packed with sliced almonds along with almond extract to give the muffin a full almond flavor that goes great with the blueberries. Then they are topped with a simple sugar glaze that gives a bit more sweetness as a treat. Check out the recipe below in post.
Frittata is a great choice if you are cooking breakfast or brunch for a larger group. Its like a omelet with all of the fillings, but you don't have to deal with perfectly executed flipping. These muffin tin frittatas are great since each is pre-portioned to a perfect size and can be customized to each persons preferences. The fillings choices are endless, I prefer the classic Western/Denver-Style filling of green pepper, onion, cheese and ham.
Morning glory muffins are the classic fruit cakes long lost cousin, however ended up much better tasting and enjoyable to eat. However do not let that scare you away so quick. Morning glory muffins are probably one of those muffins your grandmother would make when you were a little kid and still be considered timeless and are still very enjoyable today. Morning glory muffins are loaded with all sorts of fruits and vegetables, from carrots to apples, pineapple to raisins to name a few. The muffins are very savory but does have sweetness and are moist, especially when eaten warm. They are the perfect on the go treat and a great way to get a picky kid to eat his or her fruits and vegetables. Check out the recipe below in post.
