A taquito is type of rolled taco that is filled with meat and fried crispy. In these barbecue taquitos, they are baked in a hot oven quickly oven instead of deep fired making them a healthier options and still come out crispy and the chicken is tender and moist. The chicken mixed with the cheese and barbecue sauce fills each of the taquitos with plenty of flavor and makes a great game day snack or anytime.
In a medium bowl, stir together shredded chicken, BBQ sauce, chopped green onions, shredded cheese. Rotisserie chicken or left over chicken works perfect for these.
Heat tortillas in the microwave for 15-20 seconds or until pliable. Divide chicken filling between warmed tortillas and roll up tightly.
Place, seam-side down, on the baking sheet. Spray tops of taquitos lightly with cooking spray and sprinkle with a little kosher salt. Bake for 10 minutes, flip each roll over and bake for an additional 3-5 or until crisp.
Serve plain or with additional BBQ sauce or your favorite condiments.
