Looking for a light dinner that fills you up. grilled kebabs are a perfect choice with the lean meat and lightly charred tender vegetables.. In these grilled Balsamic chicken kebabs, they are made with marinated and seasoned chicken breast, bell peppers, zucchini, and red onion. Goes perfect on top of steamed rice or a crisp lettuce salad. The homemade balsamic dressing is not overwhelming and complements the kebabs perfectly.
Prior to starting, if using wooden skewers, soak the skewers in water for about an hour to cut down on them burning on the grill. In a small bowl, mix the balsamic vinegar, oil, garlic powder and Italian seasoning together.
Next, prepare the vegetables by slicing the zucchini into rounds, dice the red onion into 1” pieces and remove the stem and seeds from the bell peppers and cut them into 1” sized pieces. Place in a bowl and set aside. Place the chicken into a separate bowl.
Pour half of the marinade over the vegetables and the remaining over the chicken. Mix to coat everything. Let marinade for about 20 minutes.
Add the bell peppers, zucchini, onion and chicken pieces onto each skewer, repeating the pattern about 3 times or until all of the skewers are full. Repeat until all skewers are filled.
Preheat your grill to medium heat. Lay the skewers on the grill, and cook for about 10 minutes. Turn the kebabs every 2-3 minutes, until they’re lightly charred on all sides and the chicken is cooked through to 165° F with a meat thermometer. Remove the skewers and let rest for a few minutes then serve.
