Grilled Soy Brown Sugar Salmon

In this soy brown sugar salmon is a easy dinner for any day of the week. The salmon takes about 15 minutes to grill or to bake in the oven. The salmon comes out flavorful and flaky. By grilling the salmon first in a pouch steams the fish, then opening up and searing the salmon gives the fish a great char and caramelizing the brown sugar marinade. The recipe comes out best if you have on big fillet vs portioned fillets.

Combine the brown sugar, soy sauce, lemon zest, lemon juice, black pepper, garlic, ginger in a  small bowl.  Place the salmon in a shallow glass baking dish and add the marinade. Seal tightly with plastic wrap and marinate in the refrigerator for 1-2 hours. Turn the salmon fillet over half way during the marinading.

Preheat the grill to medium-high heat.  Take a large piece of aluminum foil and remove the salmon from the marinade. Place the salmon skin side down in the center of the piece of foil.  Loosely fold the sides up and then over themselves, repeating with the other two sides, to create a sealed packet containing the salmon.

Place the foil-wrapped salmon to the hot grill and turn off the heat directly below the foil. Cook for 15-18 minutes until almost entirely cooked through, Brush the grill grates directly over the flames with the olive oil. Carefully open the foil packet and flip the salmon skin side up directly onto the grill grates over direct heat. Grill just until grill marks appear and glaze is caramelized, about 1-2 minutes. Remove right away from the heat with a spatula to keep from overcooking and serve with lemon slices

The recipe can also be done in the oven as well. For oven cooking, Preheat the oven to 375°F. Place the foil-wrapped salmon directly onto the oven rack. Cook for 15-18 minutes until almost entirely cooked through. Carefully open the foil packet and flip the salmon and change the oven to broiler. Let the broiler caramelize the glaze for 1-2 minutes.. Remove right away from the oven and place on a baking sheet for easier transfers. Serve hot with lemon slices.
