Looking for an easy restaurant quality meal without breaking the bank and taking all day to prepare. Pork chops are the perfect meat to use. Pork chops are a tender cut of meat that benefits from higher heat cooking for a short amount of time. In these Mediterranean stuffed pork chops, the pork chops are filled with a simple spinach and feta cheese blend, then coated with a balsamic and rosemary glaze. The pork chops come out juicy and tender and packed with flavor.
Heat the oil in a skillet over medium heat. Add the pepper flakes and minced garlic cloves into the oil. Saute until fragrant, about 30 seconds. Add the spinach and sliced cherry tomatoes and allow to wilt and the liquid has evaporated, about 3-4 minutes.
Sprinkle the mixture with the salt then remove the mixture from heat and let cool for a few minutes then stir in the feta cheese. Slice a slit into one side of the pork chops to create a pocket inside. Fill each pork chop evenly with the mixture. Set aside.
Combine balsamic, honey, mustard, rosemary, lemon juice, garlic powder, salt, and pepper in a small bowl and whisk until smooth.
Brush the glaze over the pork chops.
Roast the pork chops at 400°F oven for 20-25 minutes or until a thermometer inserted in the thickest part of the pork chop reads at least 145°F. Allow the pork chops to rest for 10 minutes before slicing and serving.
