A quick and easy way to cook fish is to broil it in the oven. It is a hassle free way that takes very little effort and can be done in under 10 minutes. With the addition of the mayonnaise, the fish gets a nice golden crust and holds in the lemon-thyme flavor along with keeping the fish fresh and moist. Check out the recipe below in post.
Oil a sheet pan lightly and pat the fish dry with a paper towel. Place fish skin side down on the oiled sheet pan. Sprinkle with about ¼ teaspoon of salt and pepper over all of the fillets.
In a bowl, combine the mayonnaise, lemon zest, lemon juice, shallot, anchovy paste and thyme. Mix until combined.
Spread the mayo mixture over the top of the fish evenly. Broil until fish is just cooked through, about 6-8 minutes. The fish should be about 140F degrees inside.
