If you are looking for something new to go with your lunches or dinner in place of the normal bread or crackers for your soups and chili. These scallion cornmeal fritters are the perfect accompaniment to soups and stews and are a great side for pretty much any dinner in place of bread. The fritters are basically a cornbread or hush puppy pancakes. The cornmeal fritters are extremely easy to make and takes about 15-20 minutes from start to finish.
In a mixing bowl, mix together the egg, milk, cornmeal, baking powder, salt and scallions until well combined.
Heat a skillet over medium-high heat. Add the vegetable until about ¼” deep and heat the oil until hot, but not smoking. Add 1 tablespoon of batter carefully into the pan and repeat until you have 3-4 in the pan. Be careful not to over crowd the pan.
Fry until golden brown, flipping over once. About 3-4 minutes total.
Transfer the fritters to paper towels to drain, repeat until all fritters are made. Serve the fritters warm.
