As we are in a time where everyone is looking for easy and delicious food that is easy on the wallet and delicious in the stomach. This white bean and chicken chili is very easy to prepare, can be made within a half hour and the chili is crazy good. The spice is mild in this chili, if you would like a bit more you can add a few drops of your favorite hot sauce. The best part is the ingredients are very easy to find pantry items and are affordable. The chili is perfect to use up any leftover chicken you have from a previous dinner and makes the perfect weeknight dinner.
Over medium heat, pour the olive oil into the pan. Add the celery, onion, green peppers and green chilies. Saute until just everything begins to soften, about 5 minutes.
Add the garlic, chili powder, cayenne pepper and cumin and saute for about an additional minute until fragrant and all liquid has evaporated.
Add the chicken stock and bring to a boil. Reduce heat and let simmer for 5 minutes or until vegetables are tender.
Add the beans, chicken and half & half. Bring back to a boil then let simmer for about 5 minutes or until everything is hot.
Season with additional salt and pepper then divide into bowls and serve.
