As the holiday season is slowly creeping toward us, we will find our self involved in work potlucks and large family event. Most of the time you need a tasty easy dish you can bring with you. These apple streusel are very easy to make and require no par-baking of the cookie crust which makes preparation very quick. The bars have a great spiced apple flavor that is very tender and has a great crunch with the cookie crust and streusal topping that gets golden brown in the oven. This is a great change to the normal apple crisp. Check out the recipe below in this post.
In the bowl of a stand mixer fitted with the paddle attachment, add half of the butter, sugar, vanilla extract, all-purpose flour and the egg. Beat until everything is incorporated.
Spread the dough onto the sheet pan. Refrigerate the dough while you make the apple and crumble layer.
Peel and core the apples and chop them into ½-3/4 " chunks. Mix the apple chunks with the lemon zest, lemon juice, cinnamon, nutmeg and apple sauce. Set aside.
For the crumb topping: In the bowl of a stand mixer fitted with the paddle attachment mix the remaining butter with 2 1/2 cups of flour, brown sugar and oats. The mixture will be crumbly. Start to assemble the cake, spread the apple mixture onto the dough layer. Then use your fingers to crumble the crumbs on top. Press some crumbs together to form bigger crumbs, you don't want the crumbs to be too fine.
Bake for 40-45 minutes until the crumbs are lightly golden. Let the cake cool off completely then serve.
