Here is Minnesota, the whole summer is ended by one of the largest state fairs in the county. The Minnesota state fair brings millions of people yearly (the largest single day is in the 270,000 people). Every year there is new and unique dishes that show up. For me, my favorite is the classic corn dog. The sweet corn breading around the hot dog is the perfect summer snack. Sadly this year it was cancelled due to the current situations going on so i had to make myself my own corn dogs. This recipe is very close to what you would get at the state fair. The preparation is simple and takes on a few minutes to make from start to finish. The honey give the corn breading a golden brown color and a perfect level of sweetness. Check out the recipe below.
In a medium bowl, combine cornmeal, flour, salt, pepper and baking powder. Stir in eggs, honey and milk until smooth. Let the batter rest in the refrigerator for 10 minutes.
Preheat oil in a deep saucepan over medium heat until it reaches 350°F. Insert wooden skewers into frankfurters. Pour the cold batter into a tall glass about ¾” full. When the oil is hot, dredge the hot dog into the cup of batter so the whole hot dog is covered.
Fry 1 or 2 corn dogs at a time until lightly browned, about 2-3 minutes. Try to spin the corn dog as it fries to keep a consistent coloring around the corn dog.
Drain on paper towels and let cool slightly before eating. The cooked corn dogs can be frozen and reheated later by baking at 350°F degrees for 15-20 minutes.
