Pork tenderloin is always a big hit around my house. The ease and endless possibilities that can be done with a pork tenderloin is hard to get bored of it. This pineapple glazed pork is a great balance of a sweet from the pineapple juice and sugar and spicy flavor from the jalapenos makes the flavor of the pork pop out. This pineapple glazed pork can be made in about 30-40 minutes which makes it great for the weekdays or even special occasion. The glaze can be made ahead of time if needed.
In a saucepan, add ¾ cup of pineapple juice and the sugar. Bring to a boil as you let the sugar dissolve.
Let cook until thickened and become deep brown, about 8-10 minutes. Add the remaining pineapple juice, jalapeno, lime juice and allspice. Pour about ¼ cup sauce into a bowl and set aside.
Line a sheet pan with foil. Place the pork on top of the foil and season with salt and pepper. Brush with glaze and bake for 15-20 minutes until pork reaches an internal temperature of 145F degrees. While pork is baking, bast the pork with the glaze about every 5 minutes.
Let pork rest for 5 minutes and slice and drizzle with reserve glaze.
