In this slow cooker italian meatball and tortellini soup, there is very minimal work to prepare the soup and let it cook all day while you are out at work or enjoying the day making it a great weekday dinner for the whole family. The pork sausage can be replaced with premade meatballs to even lessen the preparation of this soup. The soup is very hearty and has a delicious flavor from the tender pork meatballs and rich flavored tomatoes. The soup can also be made ahead of time, just leave out the tortellini and add them once you ready the soup to serve.
Divide the pork into 20 pieces. Roll each portion into a ball and place into the slow cooker along with the carrots and onions.
Add all of the remaining ingredients besides the tortellini in the slow cooker. Gently stir until everything is combined. Turn on the slow cooker and cook on low for 6-8 hours or high for 4 hours.
In the last 20 minutes add the tortellini and stir them into the soup. Let cook for the remaining time.
Portion the soup and sprinkle the top with the parmesan cheese and enjoy.
