These white chocolate macadamia nut cookies with cherries is a great twist to the traditional version. The dried cherries add a but of sweet and tangy to the cookie that adds to the sweetness of the white chocolate chips and the richness of the macadamia nuts. The cookies come out thick, soft and chewy that requires no refrigeration to achieve that. Check out the recipe below. The recipe will make 2 dozen cookies and can be in the oven in 15 minutes.
In a bowl, combine the flour, baking soda and salt. In a separate bowl, beat the softened butter with the two sugars until light a fluffy, about 2 minutes.
Lower the speed on the mixer and slowly add the flour mixture until all the flour is incorporated.
Add the white chocolate, macadamia nuts and cherries. Mix until uniform throughout.
Form the dough into 2 dozen 1-2 inch balls. Place the balls about 3 inches apart on a lined sheet pan and push down the dough into a puck shape. Bake in the oven for 12-14 minutes, until the bottoms are golden brown and edges are lightly browned.
Let cool on the sheet pan and move to a cooling rack after 3-5 minutes. Enjoy once the cookies are cooled.
