My favorite fall flavor is apples, it can be used in so many different ways so I had to do one last recipes with apples. These apple spiced thumb print cookies are flaky and full of rich butter and spices plus the simple apple filling the makes these taste great and full of flavor. These cookies are quite simple to make. The first thing you want to do is beat the butter until soft and starts to get fluffy in a bowl. Add the brown sugar, baking powder and salt. Mix until combine. Add the milk, egg and vanilla, scraping the sides of the bowl occasionally. Mix in half of the flour until incorporated. Using a spatula, add the remaining flour and walnuts until a dough is formed. Using a 2 tablespoon cookie scoop, place 1-2 inches apart on a prepared cookie sheet. With a floured finger, make an round indent for the filling to be added to. Place in refrigerator for 20mins to firm. In a sauce pan, add all of the ingredients for the filling and cook on medium heat until apples are soft and most of the liquid is evaporated. Pulse in a food processor or chop with a knife until minced into small pieces. Drain if there is excess liquid. Add a 1/2 teaspoon to each cookie. Bake for 10-12 minutes until edged are browned. Let cool on a sheet pan for few minutes before transferred to a wire cooling rack. Ice the top of the cookies if desired. |
