During the heat of the summer, I always lean to light dinners that have a bit of a kick of heat and packed with light fresh flavor. Due to the heat of the past few weeks, my garden was packed with fresh red tomatoes ready to jump into a delicious meal. This pan-seared shrimp with tomatoes and avocados is the perfect dish for those warm night. The chili give it a great smoky flavor along with a slight kick of heat and the tender shrimp tossed with the soft ripe tomatoes is perfect meal. This is a must try meal for everyone, as what my wife tells me.

Since today is the unofficial day of tacos to many, Cinco de Mayo. It is not the real meaning behind the day, but since Taco Tuesday lands on we got to do a good one.  These chipotle roasted chicken tacos are backed with a delicious her and chili butter making the chicken thighs super tender and full of smokey flavor from the chipotle peppers then tossed with tender roasted onions wrapped in a warm tortilla makes a great simple taco that doesn't need all of the excess toppings. Plus the chipotle her butter makes a great topping for a grilled steak and fish or quickly tossed in pasta for a easy dinner option.

 Tacos are one of the dinners most families keep as a staple for an easy family dinner. These fried fish tacos have a crispy golden brown crust while the fish inside is moist and full flavored. The best fish to use is a halibut or cod or other firm white fish. Then topped with the sriracha lime creme and picked cabbage add a great splash of color a mixture of heat and tangy-ness that complement the fish well. Everyone is looking for a great meal that is easy to get together in the morning and be able to walk in after work to a house that smells wonderful and is basically ready for you to enjoy.
