One of the easiest meals to prepare for a family or large gathering is a simple pasta dish. Pasta dishes are easy and very inexpensive to prepare and goes a long way. This Sausage and mushroom penne gratin is a great substitute for the standard pasta bake. It is quick to make since you cook everything on the stove top and bake really quick under a broiler to get the brown and bubbly you enjoy from a dish that has baked for a long time in the oven. Check out the recipe below in post.
As spring is finally coming along and summer is on the horizon, the one plant in my garden that keeps showing up is tomatoes (even if I don't plant them haha). In about about a month or two I will have so many I will have no idea what to do with them since they do tend to show up all at once. This fresh tomato and spinach pasta is a great way to use those tomatoes that come all at once. The fresh tomato and garlic make the prefect light tomato sauce that is packed with flavor and vital nutrients. The meal can be made in under 30 minutes from start to finish and will make your house smell like a little bistro in Italy. Check out the recipe below in post.
Some of the best meals are the meals that are made with a few simple ingredients and is simple to make in a short time. This Red Curry Peanut Noodles with Shrimp is a meal that has great simple ingredients that are pack with flavors and the whole meal can be made in under 20 minutes total. The heat of the meal can be easy adjusted by the amount of curry paste you use. The peanut butter does tend to tame the heat but there is a bit of heat that still makes it through. at the end. The shrimp can be easily replaced with chicken or some other protein that fits your preference more. This is a great meal for the peanut lover which my family is full of.
With a lot of family super busy throughout the week it is sometimes hard to find a dish that is easy and still has a great amount of flavor. This mexican-style pasta skillet is a great option for an easy dinner since there is only a few ingredients and very easy to find ingredients at the grocery store. The chipotle peppers add a great smokey flavor and a bit of heat that isn't over powering but transforms the dish to what it is. The whole meal can be made pretty much in the time it takes to make the pasta. Check out the recipe below
