When you think of Quick breads they are usually full of some type of fruit and filled with sugar. With this bacon and cheese quick bread, the bread is a savory loaf that is packed with salty bacon and creamy swiss cheese. It is perfect for those occasions that you need to have something salty and savory. As it being a quick bread, it is very easy to make and is delicious with only about 20 minutes of preparation.
In a large skillet over medium heat, add the butter and onions and saute until golden brown and caramelized, about 20 minutes. In a separate pan, cook the back until crisp. Drain bacon on a paper towel lined plate to cool then chop into small pieces.
In a large bowl, add the flour, baking powder, salt and black pepper.
In a separate bowl, mix together the milk, oil and egg until well combined.
Slowly add the milk mixture to the flour mix and mix until just barely combined. Add the cooked bacon, caramelized onions and green onion, mix until combined
Add the swiss cheese and fold in gently.
Transfer the batter to the greased loaf pan. Bake at 350°F until golden browned and a toothpick comes out clean, about 45 minutes.
Let the loaf cool in the pan for 15 minutes then remove from the pan and slice and serve warm.
