If you are in the search for a side dish that can do with pretty much any meal, you have found a great contender. In this creamed corn casserole, the texture is light and custard-like packed with a sweet corn and thyme flavor. The topping has a great crunch with a rich buttery and creaminess from the crackers and cheese. The dish takes a mixing bowl and a baking dish to bake in, the clean up is simple and the preparation is just as easy to do. The whole dish can be done in about 30 minutes. I find that frozen corn works the best and gives a great sweet flavor. The cheese in the recipe can be switched with any good melting cheese.
In a large bowl stir together cream style corn, whole kernel corn, flour, eggs, salt, pepper, garlic powder, thyme and sugar.
Pour mixture into the prepared 1.5 quart baking dish. Sprinkle the grated cheese over the top. Bake in a preheated 350°F degree oven for about 35 minutes.
Remove the casserole from the oven and add the crushed crackers and butter and bake for an additional 5-10 minutes or until crackers have browned. Let cool for 5 minutes then serve.
