The standard weekday meal consist of the same old flavors and tend not to be healthy and flavorful, it seems to be one or the other. This balsamic rosemary cranberry chicken is packed with flavor and only take one pan to make the whole meal. It only needs a few minute of preparation in the morning to marinate the chicken and about 30 minutes to cook at night. The tartness of the cranberries and the sweetness of the honey really complement the chicken amazingly.
Place marinade ingredients in the bowl of food processor or blender and pulse until finely ground and combined.
Transfer marinade to a large plastic bag and add chicken. Squeeze out excess air, then seal bag. Refrigerate for at least 2 hours, or overnight.
When ready, preheat oven to 375F degrees. Place chicken in a large baking dish, season with salt and pepper and top with 1/2 cup cranberries and minced rosemary. Whisk honey and balsamic vinegar together, then pour that over the chicken.
Place baking dish in oven and bake for 20-25 minutes until chicken is cooked through. Place your oven on broil. Broil for 5 minutes, let the sauce caramelize slightly and cranberries burst. Remove from oven and serve hot with a spoonful of pan sauce over chicken.
