This Beef and Summer Squash Tex-Mex Skillet is delicious! The dish takes about 30 minutes from start to finish and is a true crowd pleaser. The ground beef and squash are cooked with diced tomatoes, corn, cumin, chili powder and topped with melted cheese and fresh herbs. It is perfect over some fresh steam rice or rolled in a fresh tortilla.
Over medium heat, add the oil to a large deep skillet and swirl oil to coat. Add the onion, garlic, bell pepper and ground beef. Saute for 5 minutes until the beef is cooked through and the vegetables are soft.
Add the squash and sprinkle the cumin, salt and chili powder over the skillet. Cook for about 3 minutes, stirring occasionally. Add corn, beans, tomatoes and stir to combine. Cook on low-medium for 10 minutes.
Sprinkle with cheese, cover and cook for a couple minutes to let the cheese to melt. Top with green onion and cilantro. Serve hot, on its own or with steamed rice or wrap in a tortilla. Feel free to add any of your favorite toppings.
