A classic style of cookie is the sandwich cookie which uses two cookies and fills them with variety of different filling. In the holiday season it tends to be two sugar cookie with a jam filling. In these blackberry walnut sandwich cookies, I use two buttery, nutty shortbread cookies packed with finely chopped walnuts then filled with tart blackberry jam between. Then finished off with a dusting of powdered sugar. Check out the recipe below in this post.
Preheat your oven to 350F degrees. Blend together the butter, sugars, vanilla and salt until fluffy.
Add the flour and chopped walnuts, stir until well combined.
The batter will be slightly sticky. The batter will become less sticky as you form the cookies.
Scoop batter into about two tablespoon balls and arrange 2" apart on a parchment paper lined sheet pan. Using a flat bottom cup smash the balls into ¼ - 1/3 " thick circles. I like to use a 1-1/2"-2" biscuit cutter or cup to make more defined circles and reuse the excess batter into more cookies. you should be getting about 36-40 total cookies. Bake in the preheated oven for 17-20 minutes or until the edges of cookies are golden brown. Let cookies cool on pan for 5 minutes then transfer to cooling rack until completely cooled.
Spoon one teaspoon of jam onto the flat side of half of the cookies. Then sandwich the other half onto the jam forming a sandwich. Finish the cookies off by dusting powdered sugar over the cookies.
