Bread puddings are a great easy all-american dessert that is packed with a great rich flavor and the flavor combinations are almost endless. In this blueberry bread pudding, the great fresh blueberries are combined with a simple buttermilk custard that can be prepped and in the oven in less than 15 minutes. The oven does all of the hard work and comes out with a great semi-solid rich flavored custard and the bread is light toasted to a golden brown. Check out the recipe below.
In a mixing bowl, prepare the custard by combining the buttermilk, eggs, both sugars and vanilla until well combined and smooth.
Pour half of the custard mixture into a 9”x 9” baking pan. Sprinkle half of the blueberries.
Arrange the butter bread over the custard, overlapping slightly. Pour the remaining custard over the bread slices and top with the remaining blueberries.
Bake the bread pudding until golden brown, about 50-55 minutes at 350°F. Transfer to a cooking rack to cook. Dust with confectioners’ sugar and serve.
