For birthdays , I enjoy making people some of their favorite desserts or meals. I feel like its a more personal gift that they really enjoy. With my moms birthday this week I decide to make one of her favorite deserts a pecan pie. This time I decided to make this bourbon pecan tart to make it something different. The sweetness of the filling and the smokiness of the bourbon really bring out the flavor of the pecans. I mean who doesn't like a little bit of booze in there dessert!! The tart can be made booze free with the substitution of apple juice for the bourbon.
Preheat the oven to 425°F. Place the pie crust round inside a greased 10” tart pan and press down into the pan. Trim any overhanging crust and dock the bottom of the pie crust with a fork. Bake the crust for 10-15 minutes or until lightly golden brown.
In a mixing bowl, whisk the eggs and sugar until smooth. Add the corn syrup, bourbon, butter, vanilla and salt. Stir until well combined. Stir in the pecans.
Pour the pecan mixture into the warm pie crust.
Bake the tart at 375°F oven for 25 minutes or until the center of the tart has set. Let the tart cool on a wire rack for 1 hour and remove from the tart pan. Serve the tart warm or room temperature. The tart can be rewarmed in the oven slightly prior to serving if desired.
