A breakfast casserole is a great easy breakfast that typically is made the night before and cooked in the morning. If you have a busy family, finding time to set the night before to prepare the breakfast dish can be difficult. With this breakfast skillet casserole, the whole dish can be made within 30 minutes from start to finish and is just as simple as the tradition way. The eggs come out creamy and fluffy packed with flavor from all of the added ingredients. The cheese can be exchanged for equal amounts of your favorite kind or can be removed all together also.
Cook bacon in a 9” oven safe nonstick skillet until crisp. Using a slotted spoon, transfer the bacon to paper towels.
Place the pan back onto the stove and add half of the bread and cook in the bacon fat until golden brown, about 3 minutes. In a bowl, toss the remaining bread chunks with the toasted ones.
In a bowl, whisk the cream, egg,salt and pepper until smooth. Stir in the bacon, cheese and scallions.
Add the eggs to the pan and cook over medium until the eggs are about the set, scraping the bottom of the pan, about 1-2 minutes. Fold in the bread and lightly pat the mixture smooth even thickness.
Bake until puffed and golden brown, about 8-10 minutes. Serve hot.
