As summer is in full swing and all of the great vegetables are starting to ripen it's a perfect time for this recipe. In this Cajun Shrimp, Sausage and Vegetable Sheet Pan, the preparation is super quick and easy making it the perfect dish for any day of the week.
The dish is packed with bold colorful vegetables, tender shrimp and delicious pork sausage. Plus it's all tossed with such amazing bold cajun flavor! This is a healthy and delicious meal that is also great for meal prep as it will be more than enough for a week's worth of lunches or dinners.
In a large bowl add the shrimp, sausage, yellow squash, asparagus and bell pepper.
In a small bowl, combine the paprika, kosher salt, garlic powder, black pepper, onion powder, oregano, cayenne pepper and thyme.
Add olive oil, lemon juice and seasonings to the shrimp and vegetable bowl and toss until coated.
Spread evenly onto a sheet pan. Bake in the preheated 400°F oven for 18-20 minutes or until shrimp is pink and vegetables are tender. Serve over rice or your favorite side.
