The art of making a great biscuit is not to over work the dough, you want to mix the dough just until everything moist and incorporated. These cheddar, bacon, and green onion biscuits are fluffy and packed full of flavor. The best part s that they come out huge, they are perfect to be sliced in half and filled with your favorite meats and transformed into a great sandwich, or my favorite way just how they are. Check out the recipe below.
Start off by filling a large bowl with the flour, baking powder, baking soda and salt. Add the cold butter to the flour mixture and using a pastry cutter, cut the butter until the texture of course meal.
Add the cheddar cheese, chopped bacon and green onions. Toss until combined.
Add the buttermilk in slowly, stir until everything is moistened. The key is not to over mix. The dough will be sticky, but firm.
Pour the batter onto a clean surface and form a 8” x 12” rectangle. Using a bench scraper or knife cut the dough into 12 equal sections. Lay each sections onto a lined baking sheet making sure each piece is about 1” thick.Bake for 17-20 minutes or until golden brown on top and a toothpick will come out clean from the center.
Let the biscuits cool for about 5 minute. Once the biscuits are cooled, add the honey to the melted butter and brush onto each biscuit. Serve warm or at room temperature.
