As winter is coming it is nice to be able to have a warm hearty meal that is easy to make and flavorful. This chicken lentil soup is very easy to make, has very simple ingredients and can be made in about an hour or so. This soup is perfect for the occasions you have a leftover chicken or can use leftover turkey in place for an after thanksgiving meal. Lentils are a very healthy legume that is packed with fiber that help thicken the soup slightly and make this soup very filling. Check out the recipe below in this post.
Start off by heating the oil over medium heat in a large soup pot. Add the lentils, carrots, celery, and onion and cook until lentils start to brown slightly and vegetables soften, about 5-7 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.
Stir in the stock, thyme, bay leaf and red pepper flakes. Let the stock come to a boil and reduce heat medium low and cook until lentils are tender, about 45-60 minutes.
Remove the bay leaf and add the chicken and spinach to the soup. Heat for an additional 10 minutes over low to allow chicken to get warm. Season with salt and pepper to taste if needed. Serve.
