The classic chicken parmesan is know for the crusty crust the is covered with cheese and tomato sauce. This chicken parmesan burger has the same crusty exterior, but full of moisture (no dry chicken here) and packed with flavor. Topped with slices of mozzarella and marinara sauce on toasted french bread makes a great meal that your family will love. If you can not find ground chicken in your grocery store, you can substitute turkey or shred chicken breast chunks in a food processor. This meal is can made in about 30 minutes time. In a food processor, blend the shredded parmesan cheese and diced bread. Blend until a fine crumb is created. Transfer to a shallow dish and set aside for later.
In a large bowl, combine the ground chicken, basil, ½ tablespoon olive oil, red pepper flake, onion powder, granulated garlic and salt. Divide into 4 ½” thick patties.
Coat each pattie in the parmesan/bread crumb mixture. Heat the marinara sauce over a low heat until hot.
Heat the remaining oil in a skillet over a medium heat, do not cook too hot or the crust will burn. Once the pan is hot, cook the patties for 4-5 minutes until browned and crusty. Flip the patties and cook for additional 5 minutes. Add the cheese and sauce and cover the pan so cheese melts, about an additional minute. Make sure the burger reaches at least 165 degrees internal. The burger can be made in a 425 degree oven also, cook for 8-10 minutes on each side until chicken is cooked to temperature.
Toast the remain bread slices. Assemble the burger on top of toasted french bread, top with about 1/2 cup of arugula leaves.
