As more and more people can start having backyard BBQ its time to make some great easy backyard appetizers that can wow you friends and family. These chicken satay with homemade peanut sauce is the perfect way to add that wow factor. The chicken comes out perfectly marinaded in a curry coconut mix the grilled to perfection on the grill. The the sauce brings everything up to the next level. The recipe takes little time to prepare, less than 15-20 minutes of work total.
To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili paste and ginger in a small bowl. If needed, whisk in 2-3 tablespoons water until desired consistency is reached. Looking for a thick but fluid sauce. Set aside.
In a medium bowl, combine coconut milk, soy sauce, curry powder, garlic, ginger, brown sugar and fish sauce.
In a gallon size resealable bag, combine chicken and coconut milk mixture. Let the chicken marinate for at least 2 hours to overnight, turning the bag occasionally.
Drain the chicken from the marinade and discard the marinade. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste.
Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10-15 minutes. Serve immediately with peanut sauce.
