Looking or a quick and easy dish that only uses one pan, this chicken with bacon cream sauce is perfect for you. The chicken is stuffed with creamy mozzarella cheese and topped with a lemon infused cream sauce topped with crispy bacon and green onions. The recipe is very low in sugar (none added) and full of lean chicken breast which make this a keto healthy dish that can be make in about 30 minutes.
In a pan over medium heat, cook the bacon until golden brown and crisp. Remove bacon pieces from the pan and set aside to drain on a paper towel. Reserve two tablespoons of bacon grease and discard remaining.
Pound the chicken breast between two pieces of plastic wrap. Add the cheese equally between each chicken breast and roll each chicken breast up. Secure each breast closed with a toothpick. Generously season chicken with salt and pepper.
Heat the bacon grease in a large skillet on medium-high heat. Add chicken breasts into the hot skillet. Cook for about 2-3 minutes on high-medium heat on both sides until each side is well browned. Remove chicken from the skillet.
Add minced garlic and chicken stock to deglaze the pan and cook the garlic for about a minute. Add half the cooked bacon.
Add chicken back to the pan and arrange the lemon slices around the chicken. Cover the chicken and bring down to a simmering and cook for about 10 minutes, until the chicken is done and at least 165F degrees.
After the chicken is cooked, remove it from the skillet. Remove lemon slices from the skillet and add the heavy cream to the skillet. Bring to boil and mix everything well, scraping from the bottom.
Immediately reduce to simmer, add the chicken back to the skillet and reheat. To serve, spoon some of the sauce over the chicken and sprinkle with remaining chopped bacon and chopped green onions.
