Once again we are back to the eve of cinco de mayo and what else do you make for the holiday, TACOS. These chili rubbed salmon tacos are packed with heart healthy salmon, avocado, and a lime mayonnaise sauce all wrapped in a corn tortilla and finished off with your favorite toppings. The preparation is simple and takes no more then 20 minutes to table and enjoying them. Check out the recipe below and let me know what your favorite taco is.
In a bowl, combine the mayonnaise and lime juice. Mix until combine. and is smooth. Place to the side while you make the salmon.
In a bowl, mix the chili powder, orange zest, sugar and olive oil together. Rub the salmon with the chili mixture and cut into 4 equal size pieces. Let stand for 5-10 minutes.
Wrap the tortillas in foil and place in oven. Bake for 8-10 minutes until soft and warmed throughout.
Place a pan or grill on high heat. Season the salmon with salt and pepper. Cook until browned and just cooked through. About 3-5 minutes on each side.
Break the salmon pieces in half a place on top of the tortillas. Place the avocado and lime mayonnaise over the salmon pieces. Serve right away with your favorite toppings. It goes great with a simple tomato and corn salsa.
