As the summer heat is pounding down on us, it is a good time to have a nice, cool salad that is light and delicious in flavors. This chinese chicken salad is full of umami flavors and a breeze to prepare. The salad can be all put together minus being dressed for a dinner to be served in no time at all. The salad also makes a great lunch prep meal with the dressing in a separate container and toss right before you eat making a great low carb lunch.
Add all dressing ingredients into a small bowl, Whisk well and set aside. The dressing can be made up to a few day ahead and mix right before use.
In a large mixing bowl, add the lettuce, broccoli slaw mix, green onions, ⅓ cup of cilantro, and mandarin oranges. Toss until combined.
Pour half the dressing over the salad, toss together, and taste. Save remaining to drizzle on top of desired. Add the cooked chicken, crispy noodles, and almonds.
Portion onto plates and sprinkle on the remaining cilantro and additional almonds or crispy noodles if desired.
