The standard chips and dip is the essential game day snack that you need at every sports party. This chipotle onion dip is a great change from the standard prepackaged that is found in refrigerated sections all over the country. The addition of the chipotle chili powder adds a but of spicy and smokiness to the dip and really brings it to a new level. The toasted pita chips are simple and take minutes to make and come out crispy that you expect. Check out the recipe below in post.
In a saute pan, over medium-high heat, melt the butter and olive oil until butter has melted. Add the onion and cook until softened and light brown. Lower the heat to medium and cook until golden brown.
In a bowl, add the cream cheese and sour cream. Mix until smooth. Add the onions and chipotle powder until combined. Season with salt and pepper to taste. Cover and let chill for at least 1 hour in refrigerator.
While the dip is chilling, Preheat the oven to the broiler. Heat the ΒΌ cup of butter and garlic until fragrant. Cut the pita fold in half to create a flat disks. Place the pita disks on a sheet pan and brush with butter. Place the pitas until broiler until golden brown. Let cool and cut into wedges.
The dip can be made a day ahead and the chips can be made up to 6 hours ahead.
