Here in Minnesota, it seems like every barbecue or party, you will always see some type of bars on the table. They are very easy to make and are typically delicious. These chocolate mud hen bars don't have the best sounding name but they come tasting really good. They are pretty much a s'more type bar that has a cookie crust with walnuts, chocolate and marshmallows topped with a brown sugar meringue. The bars some out chewy and sweet.
In a mixing bowl, beat together the butter and granulated sugar until light and fluffy. Beat in the egg yolks until blended and well combined.
In a separate bowl, Mix together the flour, baking powder and salt. Fold the flour mixture into the butter mixture until a dough is formed. Press the dough mix into the bottom of a greased 9" x 13" baking pan firmly.
Sprinkle the walnuts, chocolate chips and marshmallows equally over the cookie dough mixture.
Beat the egg whites in a new, clean bowl until firm peaks are formed. Fold in the brown sugar quickly and carefully. Spread the egg white mixture evenly so everything is covered.
Bake in a 350°F oven for 30-35 minutes or until the crust is golden brown. Transfer the pan to a wire rack and let cool completely. Cut the cool bar into 24 squares.
