As life is getting more and more back to normal and being a lot more busy, it seems like I am always looking for a snack that will get me going and not packed with sugar and salt. In these chocolate peanut protein bars, they are packed with protein to give you a boost of energy and a bit of sugar to fix the cravings. Plus these protein bars are super soft and chewy and require not much more than a couple bowls and a spoon to mix everything together. Once you make your own, you will never go back to the store bought ones.
In a mixing bowl, combine the oats, protein powder, cinnamon, and salt. Stir to combine.
In a medium mixing bowl, place the peanut butter, honey, and coconut oil. Set the bowl over a saucepan of water and bring the water to a simmer over medium to medium-high heat. Stir and heat until the mixture is smooth and runny. Remove the bowl from the saucepan and turn off the heat.
Pour the peanut butter mixture into the oat mixture bowl. Mix until well combined and all oats are moist. The mixture will seem very dry at first but will come together as you stir. Stir in the chocolate chips and chopped peanuts.
Press evenly into the prepared pan and refrigerate for 1 hour or until firm. Lift the bars from the pan using the parchment handles and transfer to a cutting board. Slice into bars of desired size and enjoy.
