These chunky peanut butter cookies are packed with bold peanut flavor that packs a great sweet and salty balance. The cookies come out very moist, soft and will last for days in a sealed container. The dough does not require any refrigeration, it can go straight from the mixing bowl to the baking sheet and 15 minutes later you have a great crowd-pleasing cookie that will have friends and family lining up. In a bowl, whisk the flour with the salt, baking powder, baking soda. In a large bowl, using a mixer, beat the butter with the peanut butter and both sugars on high until light and fluffy. Beat in the egg and vanilla extract.
With the mixer on low, add the dry ingredients and mix until just incorporated.
Fold in the chopped peanuts with a rubber spatula. Do not over mix. Form the dough into 1-inch balls and place them on a prepared sheet pan about 2 inch apart from each other. Press the top of the cookie slightly into a puck shape.
Bake the cookies for 12-15 minutes until slightly browned. Let cool on sheet pan for 2-3 minutes before transferring to cooling rack. Repeat until remaining dough is baked. Will make about 3 dozen cookies.
