One of the best flavors is a nice warm cinnamon flavored items for breakfast, everything from a warm cinnamon bun to these amazing cinnamon oat scones. These cinnamon oat scones are full of great cinnamon and sugar flavors blended into the flaky and buttery scones. Plus topped with a drizzle of a cinnamon glaze to top it all off. The addition with the oats help get you energized to start your day and they are perfect to grab on your way out the door to start your busy days.
In a small bowl, combine the pecans, brown sugar, and cinnamon. Set aside.
In a large bowl, combine the flour, oats, sugar, baking powder, and salt. Add the butter and mix with a pastry blender or a fork until mixture resembles coarse crumbs.
In a bowl, whisk together the milk, egg, and vanilla.
Add the egg and milk mix into the flour mixture and stir just until combined. Fold in the cinnamon mixture over the dough. Gently stir until the batter is just swirled with the cinnamon mixture.
Dump the dough onto a clean counter and roll into a square, cut the scones into desired sizes, 3 x 3 works great for me to create 9 total. Bake on a parchment lined pan at 425°F for 11 to 13 minutes, or until golden brown.
While the scones are baking, whisk together the confectioners' sugar, ½ teaspoon cinnamon and the 4 teaspoons milk. Add more milk if needed. Let the scones cool for about 5 minutes and drizzle the glaze over the warm scones.
