If there is one baked dessert that defined summer, the peach cobbler would be a strong contender for that spot. The fresh peaches baked into a soft tender cake served with a big scoop of vanilla ice cream is picture perfect on a hot summer night. In this classic peach cobbler, the peaches are tossed in a cinnamon sugar spike with bourbon that really brings out the flavor of the fresh peaches. then the batter wraps around the peaches hiding them in every bite.
Toss the peach slices, ⅔ cup sugar, bourbon and ground cinnamon. Set aside as you prepare the batter.
In a separate bowl, combine the flour, baking powder, salt and remaining ¾ cup sugar. Add the melted butter, milk and vanilla extract. Mix until well blended and smooth.
Spread the batter in the bottom of a prepared 2.5 quart baking dish. Place the peach mixture over the batter evenly (do not mix into batter). Sprinkle with additional cinnamon if desired.
Bake the cobbler at 350°F until the middle has set and the edges are browned, about 50-60 minutes. Let cool for 30 minutes.
Dust with powdered sugar and serve warm with vanilla ice cream.
