As it goes These crab fluff balls are similar to the classic crab cake, but are lighter and fried to a light crispy crust wrapped all around. Each one is packed with delicious fresh crab and flavorful. The preparation is easy and simple and they fry up within minutes and come out light, fluffy and perfect for any occasion.
In a bowl, whisk together the flour, crushed crackers,old bay, baking powder and salt.
In a separate bowl, combine the soda, scallions, eggs, mayonnaise, mustard and hot sauce.
Add the dry ingredients into the wet mix and mix until just combined. Gently fold in the crab meat until well combined. Cover and refrigerate for 30 minutes.
Add the oil to a pot and heat the oil to about 350°F degrees. Using a 1 oz scoop (2 tablespoons) portion out the crab mixture into balls. Once the oil is hot, add the balls 6 at a time into the hot oil carefully and fry until golden brown and cooked throughout, about 4-5 minutes. Transfer the cooked balls to a paper towel lined pan and repeat until all have been fried.
Serve the crab balls warm and right away.
