When looking for a great mid week dinner, the ease of cleaning up after is just as important as the time it takes to cook. In this creamy pasta with baby spinach, the whole dish is made in one single pan, which makes the clean up just as quick. The pasta comes out perfectly cooked and packed with fresh spinach all covered in a cream sauce that makes it self with the cream and parmesan cheese. The whole dish can be made in under 30 minutes.
In a food processor, process the bread pieces until ground coarsely, about 5-10 seconds. In a skillet, melt one tablespoon of butter over medium heat. Add ½ of the garlic and bread crumbs and cook until toasted, stirring frequently, about 3-5 minutes. Transfer to a bowl and set aside. You can use 1/2 cup of panko bread crumbs in place of the bread slice toasted the same way.
In the empty skillet, add the remaining butter over medium heat. Add the remaining garlic and red pepper flakes, cook until fragrant, about 30 seconds.
Add the chicken stock, cream, salt and pepper. Bring the liquid to a simmer and add the pasta. Cook over medium heat uncovered until pasta is al dente, about 10 minutes.
Remove the pan from heat and stir in the spinach and parmesan cheese. Sauce should thicken slightly. Sprinkle the toasted bread crumbs and serve.
