Looking for a great easy recipe that takes little effort to prepare and let the marinade and oven do all of the hard work? This Cuban Mojo Marinated Pork comes out super juicy and tender. The mojo marinade is packed with a primary garlicky citrus flavor and combines with fresh herbs that crusts to make one delicious pork roast. The marinade also work amazing with chicken and beef.
In a food processor or blender, add the orange juice, cilantro leaves, mint leaves, and garlic cloves, and pulse until everything is finely chopped. Add then olive oil, zest, lime juice, oregano, and cumin. Blend quickly just until well combined
If you don't have a food processor or a blender, chop the cilantro and mint finely and minced garlic. Add the remaining ingredients listed above in the bag and mix well. Place the pork inside a zip top bag and pour the marinade in on top and press all air out of the bag. Place the zipped up bag in a baking dish or bowl, and put it in the fridge for 2-3 hours
Preheat the oven to 425° degrees F. Place a wire rack over a foil lined baking sheet. Place the pork on the rack and discard the marinade. Salt and pepper the pork well. Roast the pork for 30 minutes. It should be lightly browned. Turn the oven down to 375° F and continue to roast for another 1 hour and 15-20 minutes, or until a meat thermometer reads 160°F.
Transfer the pork to a cutting board and let rest for 15 minutes. Slice to pork against the grain in thin slices.
