With the temperatures going down, its time to buckle down with some great fall meals. Shepard's pie is a great hearty meal that is typically made with lamb, but ground beef is a great replacement if ground lamb is not available. In this easy and delicious sweet potato shepard's pie, the meal packed with meat and vegetables and topped with a sweet and delicious sweet potato topping. The dish is very easy and healthy meal that is perfect for any family. The ingredients are very simple and easy to find anywhere.
In a preheated oven at 375℉. Bake the cubed sweet potatoes until fork tender about 20-30 minutes.
In a skillet on medium heat add the ground beef, onions, minced garlic, chili powder and oregano. Cook on medium heat until the meat is brown, about 10 minutes.
Stir in tomato paste and water until smooth sauce is formed. Stir in the mixed vegetables and cook until hot. Place aside as you make the topping.
Mash the sweet potatoes, add the chili powder, salt and brown sugar. Mix until smooth.
Transfer the meat filling to a casserole dish (9 x 9 inch dish will work) or 10 inch cast iron skillet and top the meat filling with the sweet potato mash. Bake for 15 minutes in the 375℉ oven.
Remove from the oven and serve.
