One of the most common sides is that the french fry. They are typically fried in oil and aren't that healthy, that's when oven baked fries come in handy with as a healthier option. These crispy oven potato fries, the preparation takes less time then the time for your oven to heat up and there is no need to par boil or soaking before baking. The oven baked fries are soft and tender pillows inside and crunchy on the outside with a delicious flavor from being tossed in thyme and ground coriander. They make a great side dish, appetizer or any time snack.
Wash and scrub the potatoes clean and let them dry. Start by cutting the sides off slightly lengthwise so the potatoes have a flat sides. It will make cutting the potatoes in to sticks much easier. Cut the potatoes with skins on lengthwise into ½” thick sticks.
In a large bowl, add the potato sticks, coriander, thyme and remaining olive oil. Toss with your fingers or tongs until all of the potatoes are covered equally with seasoning and oil.
Transfer to the greased sheet pan and spread out in a single layer. Sprinkle salt and pepper over the potatoes
Bake the potatoes on the top ⅓ of the oven at 450F degrees for 20 minutes. Carefully flip the potatoes over and bake for an additional 20 minutes until golden brown. Season with additional salt and pepper as desired.
