Chimichurri sauce is an Argentina sauce that is great for marinating and as a condiment on top of grilled meat. The chimichurri sauce is a very vibrant green color and is very similar to a pesto that uses cilantro and parsley in place of basil. With these grilled shrimp you use the chimichurri sauce for a marinate then use it as a finishing sauce that packs the shrimp with great flavor inside and out. It is perfect as a meat portion of a meal or as an appetizer. Check out the recipe below in the post.
In a dry skillet, add the Serrano chilies and unpeeled garlic, over medium heat let it roast turning often until garlic is soft and fragrant and chilies start to brown and soften. about 10-15 minutes let cool and peel the garlic and cut the chilies in half, remove the seeds for a milder sauce.
In a food processor, add the cilantro, parsley, chilies, garlic, oil and salt. Puree until smooth. If sauce it very thick paste add little bit of water to thin out. Should be consistence of pesto.
In a bowl add the shrimp and half of the sauce and toss. let marinate for 30 minutes. Its a great time to let bamboo skewers soak in water.
Once marinated, add the shrimp to the skewers. Heat the grill to medium high heat. Oil the grates and add the shrimp skewers. Cook each side for 2-3 minutes per side until shrimp become a milky white and translucence.
Serve warm with reserved sauce.
