As when it comes to steak, I prefer the steak well seasoned in placed of having steak sauce all over the steak. However with this sweet and spicy hoisin sauce, the sweet and spicy flavor is perfect with the grilled beef. The sauce is a mix between different regions around the world. It is very high in asian flavors with the soy and hoisin sauce and the ginger. With the butter stirred in at the finish is very french inspired adding much richness making this sauce delicious over the sliced steak.
In a medium saucepan, heat the 2 tablespoons of oil. Add the shallots,garlic, ginger, red pepper and cilantro and cook over medium heat, stirring occasionally until softened, about 5 minutes.
Add the hoisin sauce, soy sauce and chicken stock. Bring the sauce to a boil and continue until thickened, about 5 minutes.
Stir in the honey and butter until blended. Remove from heat and keep warm.
Rub the steaks and onion slices with oil. Season with salt and pepper. Grill the steaks and onion over high heat and cook until cooked to your preference, 4-5 minutes per side would be medium-rare.
Let the steaks rest for 5 minutes then slice thickly. Serve with the grill onions and sauce over the steak.
