In these hawaiian pulled chicken sandwich, the chicken is pulled then tossed in a sweet and sour sauce that is packed with a soy and pineapple flavor. Then the sandwich is topped with a simple crunchy broccoli pineapple slaw that brings the whole sandwich together. With the use of a precooked rotisserie chicken, the whole meal can easily made in 20-30 minutes. The sandwich will make you think you are sitting on a beach.
In a large bowl combine broccoli coleslaw, pineapple and green onions. In a small bowl, whisk together mayonnaise, rice vinegar, brown, pepper and salt until smooth. Add to broccoli mixture; toss to coat. Place in the refrigerator until ready to use. Refrigerate for 2-4 hours for best flavor, toss again prior to serving.
In a small saucepan, combine the pineapple juice, soy sauce, ketchup, brown sugar, garlic and honey. Heat over medium heat until it comes to a slight boil. In a small bowl combine the cornstarch and water. Add to the sauce pan and let the sauce thicken up. Keep the sauce warm.
In a mixing bowl, add the warm pulled rotisserie chicken and half of the sauce. reserve and set aside the remaining sauce.
A quick and easy to make pulled chicken with chicken breast is to season with salt and pepper and heat a pan with 2 tablespoons of olive oil. Brown both sides and add 3/4 cup of chicken stock and cover over low heat. Cook for about 10 minutes flipping half way or until chicken reaches 165°F internal.
To make the sandwiches, divide the chicken evenly and top with a ¼ cup serving of the pineapple slaw. Top with remaining sauce if desired.
