The classic breaded pork chops is a dinner pretty much everyone has. The problem is they tend to be dry, tough and flavorless. In these honey mustard breaded pork chops, the pork chops are pounded thinner tenderizing them. After that the pork is dredged in a honey and mustard egg wash then coated in bread crumbs, then fried to a golden brown. The pork chops comes out tender and juicy and the coating is flavorful and crispy.
Place the pork chops between two sheets of plastic wrap, keeping space in between them. Gently pound the pork chops int ⅜” thickness.
In a shallow mix together the mustard, honey and egg. In two separate bowls add the flour to one and the bread crumbs to the last dish.
Pat the pork chops dry and salt and pepper both sides. One at a time coat the pork chops in the flour, then egg mixture, then into the bread crumbs, pressing the breadcrumbs to adhere to the pork chops. Place the coated pork chops onto a clean dish and let rest for 5 minutes.
Heat ¼ cup of oil in a large skillet over medium-high heat until about to smoke. Cook the pork chops in a batch until golden brown on both sides and cooked through (about 3-4 minutes on each side). Repeat with remaining oil and pork chops.
