Looking for a quick and east dinner that is perfect for any night, this chicken dish might be up your alley. In this honey glazed chicken, the chicken is marinated quickly packing it with a fist layer of flavor then roasted and based with a honey whiskey glaze that sticks and coats the chicken. The skin on the chicken helps hold in the juices and keeps the chicken moist and get perfectly golden brown and crisp in the quick 30 minute cook time.
In a medium bowl, whisk the soy sauce with the whiskey, honey, ginger, black pepper, sesame oil and cinnamon. Place the chicken pieces in a zip top bag and pour the marinade over the chicken and press excess air out of the bag. Seal tightly and turn to coat. Cover and refrigerate for 1 hours.
In a small bowl, combine the honey, lime juice, whiskey, soy sauce, pepper flakes, cilantro and brown sugar; stir until the sugar is dissolved.
Line a large rimmed baking sheet with foil. Arrange the chicken on the baking sheet, skin side up and brush with the glaze.
Roast the chicken in a 350°F oven for about 30 minutes, until cooked through and 165°F internal. Baste the chicken with the glaze every 10 minutes or so. Let the chicken rest for 5 minutes then serve.
