Most beef pot roast recipes have a heavy sauce with a heavy brown gravy or a soup base. In this Instant pot cola pot roast is cooked in a sweetened stock with the cola and sugar. The beef roast has a great balance of sweet and savory with a pinch of heat and can be cooked fork tender in 45 minutes in an instant pot or 6 hours in a slow cooker. The cooking liquid can be transformed into a sauce or simply spoon the cooking liquid over beef when finished if desired.
Start off by setting you instant pot to saute. Salt and pepper both sides of the chuck roast.
Once hot add two tablespoons of vegetable oil and brown both sides of the roast. Add the onions and garlic and cook until softened.
Add the cola, beef stock, tomato paste, thyme, brown sugar, sriracha sauce. Mix well.
Close and seal your lid. Set your instant pot to pressure and cook on high for 45 minutes then let natural release.
Slice the roast and dinner is served. Spoon pan drippings over the roast or if desired thicken juices with a cornstarch slurry for a quick gravy.
