When it comes to weekday meals, everyone thinks you can have a restaurant-style meal at home within minutes. This Italian stuffed chicken breast is a super quick and easy recipe that is overflowing with flavors that takes minutes to prepare and cooks in under 15 minutes. The chicken comes out juicy and tender and pairs amazing with the mushrooms, sun dried tomatoes, spinach and of course the gooey mozzarella cheese.
Heat 2 tablespoon of oil in a heavy bottom skillet and add mushrooms, sliced sun dried tomatoes and garlic. Season the mushroom mixture with the Italian seasoning blend and salt on high heat for 2-3 minutes till they are golden brown and slightly crispy around the edges. Remove in a bowl and set aside.
Flatten the chicken breast between two layers of plastic wrap until about ½” to ¾” thick. Sprinkle salt and pepper on both sides.
Top all of the chicken breasts with equal amounts of mushrooms, chopped spinach leaves and cheese. Fold the other side of the chicken breast on top and then secure it in place with a toothpick so that the stuffing doesn't come out. Repeat this for all the chicken breasts.
Heat the remaining oil and the butter in the same skillet and place the chicken breasts. Cook the chicken over medium-high heat on each side for 7-8 minutes depending on the size of the breasts.
Remove the toothpicks and let the chicken rest on a plate for 2-3 minutes before serving.
